Best Brownies Ever

Okay, so food photography is clearly not my thing, but rest assured, these Brownies are incredibly delicious, and this truly is the only Brownie recipe you will ever need.

Ingredients:
200g dark chocolate
125 g butter
4 x-large / jumbo eggs
375ml / 375g / 1 ½ Cups caster sugar
5ml / 1tsp vanilla essence
250ml / 150g / 1 cup flour
30ml / 25g / 2 Tblps Cocoa
3 ml / ½ tsp Baking powder
100g walnuts / pecans (optional)

Method:
• Preheat oven to 180 Deg C
• Melt chocolate in a double boiler or microwave
• Beat in the softened butter and allow to cool slightly
• Beat eggs and sugar until very light and fluffy (whisking over hot water helps)
• Add vanilla
• Sift dry ingredients
• Fold dry ingredients, chocolate and nuts into the egg mixture. DO NO OVERMIX.
• Pour into a greased baking tin (27 x 32cm)
• Bake for 20 minutes. Don’t bother with the skewer test, the mixture should be a little wet as you want the brownies to be deliciously soft in the center, and not a hard rusk texture.
• Leave to cool in the tin before cutting into squares.

Looking for something different?
There is a second option for these brownies… Add a cream cheese layer between 2 layers of the brownie. It’s incredibly good, and adds a whole other dimension to these delicious rectangles of pure delight…

Cream Cheese Filling:
125g cream cheese,
1 egg,
3 Tblsp sugar,
¼ tsp vanilla
• Beat the ingredients together.
• Pour half of chocolate mixture into the tin. Then pour in the cream cheese mixture, then pour in the rest of the chocolate mixture. Swirl slightly to get a more marbled effect if necessary. Bake as above.
