Chocolate Chip Cupcakes

Where the line between muffin and cupcake runs thin…these delectable morsels of heavenly deliciousness reside. These don’t need icing in our opinion, the key is finding the right kind of chocolate – you want something with a full cocoa flavour with just the right amount of sweetness. If you eat them while they are still warm and the chocolate is still slightly melted…yum!
Ingredients:
1 ½ cups All purpose Flour
¾ cup Sugar (white or brown, your choice)
2 tsp Baking Powder
½ tsp Salt
½ cup Milk
½ cup Oil
2 Eggs
1 tsp Vanilla Essence
Optional: 1 large slab, chopped into chunks (180g) dark chocolate (my favourite is Bournville, but your choice)
Method:
- Pre-heat the oven to 180 °C
- Sift dry ingredients
- Add wet ingredients to the dry ingredients. Blend very well.
- If adding chocolate chips, add them now.
- Fill each muffin cup to ¾ full (you can use the paper cupcake cases if you like, but also find without).
- Bake at 180 ° C for 15 minutes
