Blue Berry Loaf Cake
You can substitute the blue berries for any type of berries that you prefer. I have also made this cake using frozen berries and it worked perfectly.

Ingredients:
250 g cake flour
5 ml (1 tsp) baking powder
2 ml (1/2 tsp) salt
150 g (even 125 g) sugar
2 large eggs
180 ml (3/4 C)milk
160 ml (2/3 C) oil
250 g blueberries
Icing sugar for dusting
Method:
- Preheat oven to 180 Deg C
- Grease 28 x 11 cm loaf tin
- Sift together the dry ingredients in a bowl, add the sugar.
- Whisk together eggs, milk and oil, and add to the dry ingredients. Mix until just combined (don’t worry if its still slightly lumpy, it will still work.) Fold in half the berries and the orange zest.
- Spoon into the prepared loaf tin and sprinkle the remaining berries on top.
- Bake for 45 – 60 minutes or until a skewer inserted in the middle comes out clean(45 minutes in our oven was perfect).
- Cool slightly in the tin, then turn out on a wire rack to cool completely. Dust with icing sugar just before serving.
